Recipe of the Month Pasta with Garlic and Tomatoes ½ cup extra virgin olive oil
8 cloves garlic, very thinly sliced ¼ cup finely chopped fresh basil 3 tomatoes, peeled, seeded and diced fine. Sea salt and freshly ground black pepper to taste ¼ cup dry white wine ½ cup chicken stock 3 packs Miracle Noodle Spaghetti Heat olive oil at low to medium temperature in a large skillet. Add the garlic and gently roast on low to medium heat, be very careful not to brown garlic. This should take approximately 4 to 5 minutes. Add the basil, tomato, salt and pepper. Now add the wine raising the heat slightly and cook for about 1 minute. Pour in chicken stock and cook until sauce reduces to a gravy-like consistency, raising the heat again if necessary. At this point reduce heat to low. . Drain and rinse pasta, toss in sauce and serve.

What is involved in the preparation of The Miracle Noodle?
Miracle Noodles are instantly ready. Just drain the pack and rinse in a strainer or collander for a couple of minutes. Lightly boil for 1 min. It can be added to cooking dishes to absorb the flavor all the while retaining its consistency.

Can I subsitute the Miracle Noodle with pasta in recipes?
Yes, yes and yes!

Mini-Pearls with Parsley and Lemon Zest

2 packs mini-pearls
1 Tbsp. extra virgin olive oil
1/2 tsp. coarse (kosher) salt
1/4 tsp. freshly ground pepper
Grated zest from 2 lemons
1/4 cup chopped flat-leaf parsley

Drain and rinse the pearls well; transfer to a serving bowl. Add oil and remaining ingredients;
toss to combine flavors. Spoon ¾ cup onto each of 4 dinner plates and top with the chicken dish of your choice


Pasta with Roasted Peppers and Broccoli

Serves 6
4 packs ditilini
2 tbsp. vegetable oil
1/2 tsp. hot red pepper flakes
1 pound broccoli florets (6 cups)
2 6-oz. jars whole pimientos or roasted peppers, drained and diced
1/4 cup grated Parmesan cheese


Warm the oil and red pepper flakes over medium heat for two minutes. Add the broccoli and saute for 2-3 minutes. Add 1/2 cup water and cover. Cook broccoli until tender-crisp, about 3 minutes.
Toss the pasta with diced peppers. Season with salt and pepper to taste. Pour the broccoli over pasta, sprinkle with Parmesan cheese and serve.

Spicy Pasta with Scallops

1 lb. sea or bay scallops, the sea scallops are larger and can be cut in half if desired
olive oil cooking spray
4 cloves fresh garlic, pressed
1 red or green jalapeño chili pepper finely minced
1 medium yellow onion, chopped
1 28 oz. can chopped roma or regular tomatoes or 2 lb. fresh tomatoes, peeled, seeded and chopped
1 roasted red bell pepper, chopped
2 tablespoons rinsed and drained capers
¼ cup white or light bodied red wine
3 ounces tomato paste (1/2 of a 6-oz. can)
½ cup sliced black olives
2 tablespoons chopped fresh basil
½ tablespoon extra virgin olive oil
3 packs Angel Hair Miracle Noodles Pasta
6 tablespoons fresh grated Parmesan or Asiago cheese – optional

Method:
1. Lightly spray a large non stick skillet or Dutch oven with cooking spray and heat on medium for 2 to 3 minutes. Sauté garlic, onions and chilies together until onions become tender.

2. Add tomatoes, roasted bell pepper, tomato paste, wine and salt to onion mixture and bring to gentle boil stirring often. Reduce heat to low and simmer
20 minutes to an hour.

3. Add capers and olives to sauce. Increase heat to medium again and add raw scallops along with their nectar continuing to cook stirring often until scallops are no longer
translucent, an additional 5 to 8 minutes.

4. Add olive oil and fresh basil to sauce. Add angel hair to sauce if desired tossing all ingredients together gently. Remove from heat and serve with fresh grated cheese.

Yield: 6 - 1 1/2 cup servings
