Ingredients
- 2 cups, Broccoli Slaw Mix
- 1/4 cup(s), Cilantro, Raw
- 1/4 pepper, Poblano* Pepper, Raw (Grams)
- 1/4 cup(s), Mayonnaise
- 1/4 cup(s), Sour cream
- 1 lime yields, Lime juice
- 1 tbs, Xylitol
- 1 tsp, Ground Cumin
- 2 tbs, Mustard - Yellow
- 3 ounce, Monterey Jack
- 2 packages Miracle Noodle (6.9 oz ea.), Ziti
- Salt and pepper to taste
Method
- Prepare Miracle Noodles. Rinse in cold water, microwave for 2 minutes. Rinse in cold water again and allow to cool in strainer. Press out additional moisture with a paper towel.
- Combine broccoli slaw, cilantro, and diced Poblano pepper in a large bowl. Set aside.
- Combine sour cream, mayonnaise, lime juice, cumin, mustard and sweetener in a separate bowl. Mix well.
- Add wet ingredients to dry and stir to combine.
- Add Miracle Noodle and gently stir to combine.
- Add cheese, and gently stir to combine.
- You can eat it immediately, but it is better to refrigerate for about an hour to allow tastes to meld. Garnish with additional cilantro.
