Ingredients


  • 2 packages of Angel Hair Miracle Noodles
  • Optional: 1 boneless, skinless chicken breast, 2 thin-sliced pork chops, and/or 6 oz shrimp
  • 1 tsp crushed garlic (2 cloves)
  • 1 tbsp olive oil
  • ¼ to ½ cup onion, thinly sliced
  • 2 carrots, grated
  • 2 stalks celery, thinly sliced
  • Any other vegetable you want, cut small or thinly sliced
  • 1 ½ cups bean sprouts (fresh is best, but canned works too)
  • 2 tbsp soy sauce
  • 2 tbsp yellow curry powder
  • 1/8 to ¼ cup water

Method

  1. Prepare Miracle Noodles by rinsing well, boiling for 1 minute, and then dry-roasting in a clean frying pan over low heat, until squeaky. Set aside.
  2. Heat oil and garlic in pan over medium heat, and use to brown chicken and/or pork, if using.
  3. Add onions, carrots, and any optional vegetables you are using. Add a splash of water and cover with lid. Allow to steam approximately 5 minutes, until veg are nearly cooked.
  4. Add celery, and shrimp if using. Cover and steam another 2 minutes.
  5. Mix in bean sprouts, curry powder, and soy sauce, and stir-fry until hot and no water remains in pan (about 5 minutes). Add noodles, mix well, and heat another minute until warm.
  6. Nutrition information depends on the optional ingredients used. Vegetarian versions are generally less than 200 calories per serving.
