"I was so hangry the other day and in the mood for a BLT salad, but I had no lettuce. So I decided to have some pasta instead. I always have cooked bacon in my fridge, so this came together in about 20 mins. It turned out to be absolutely delicious. I shared it with my daughter but really could have easily eaten the whole thing. You will really love this easy dish."

2 packages of Miracle Noodle Fettuccine
6 slices of cooked and chopped bacon
1 medium vine ripe tomato chopped into bite-sized pieces
1 small jar of artichoke hearts (optional)
2 heaping TBS of mayonnaise
1 tsp of smoked paprika
Salt and Pepper
1. Rinse and drain Miracle Noodle Fettuccine. Put your pasta in a wide bottom pot and simmer on med-high heat until all the liquid is gone and it starts to stick. As soon as they begin to stick, remove pot from heat, and turn down your heat to low.
2. Add your mayonnaise and paprika stir to combine then add your salt and pepper to taste. Place the pot back on the stove and add the chopped tomato, bacon, and artichokes.
3. Toss to combine and heat until everything is hot.
4. Serve with fresh chopped scallions.
