Healthy Tapioca Pudding

"As you may know, I love replicating desserts is ways that can be enjoyed as part of a variety of healthy lifestyles. This tapioca pudding the the perfect example of a spot on recreation the looks and tastes exactly like the classic! It's creamy and rich, with a hint of vanilla and lots of translucent pearls. However, unlike the original, this recipe only takes about five minutes to put together and very minimal ingredients."

INGREDIENTS:

1 box Simply Delish Natural sugar-free vanilla instant pudding mix
1 1/4 C unsweetened nondairy milk
1 package Miracle Rice (as the tapioca pearls)
Optional: 2 eye droplets of OOOFlavors Cinnamon Danish Swirl flavor
Ground cinnamon for topping

DIRECTIONS:

1. In a stand mixer, make the Simply Delish Natural vanilla pudding mix according to box instructions using the unsweetened non-dairy milk.

2. as the pudding is whipping together, this is the time to add in the cinnamon danish swirl flavor drops. I love the warming flavor of cinnamon in this recipe and it pairs so well with the vanilla.

3. Once the pudding is fully incorporated, fold in one drained package of Miracle Rice.

4. serve immediately topped with ground cinnamon or store in an airtight container in the fridge.
