Miracle Rice Coleslaw

Sometimes you just get a craving for the taste of summer! These cold temps are having us dreaming of a warmer climate, flip-flops, and sandy beaches! Here's how Miracle Noodle Ambassador Soury is handling it. We think it's pretty genius!

If you're a fan of coleslaw, chicken salad, cold rice/grain/pasta salads, yummy picnic and bbq side dishes, mayo-based salads, or 10-minute meals... then this might be for you! While it IS winter, this is one of those, lighter and refreshing, yet so satisfying, dishes I could eat every day in the summertime!

This is a super easy side that comes together so quickly. Not that I ever have any leftovers, but this would be great eaten cold, straight out of the fridge.

INGREDIENTS:

1 bag of Miracle Rice
1/2 of a small red bell pepper, chopped (you could also use peas or celery)
1 small jalapeno, chopped (optional, if you want it spicy)
2-3 oz shredded chicken - I used up what was left of the canned chicken I had in the fridge
1.5 - 2 tablespoons of Hellman's mayo
1 - 1.5 tablespoons white vinegar or fresh lemon juice (I prefer lemon juice if I have it on hand)
Salt, pepper, sweetener - all to taste.

METHOD:

1.) Drain and rinse the rice, then dry fry in a hot empty pan/pot until excess moisture is gone. Set aside.

2.) In a mixing bowl combine all of the other ingredients and blend well.

3.) Add the rice in, mix well, and enjoy!
