        "Going to a BBQ tonight and planning on sticking to my plan! Made a quick bowl of my Greek carb-less orzo and spinach yumminess! Yes also had protein! 3 oz of grilled chicken, but I was so hungry that it didn't make it in the bowl! It's in my belly already!"

        INGREDIENTS:

        8 oz package of Miracle Rice
        Fresh baby spinach (chopped)
        1 minced garlic clove
        Fresh lemon juice
        Salt and pepper
        Fat Free gets cheese (optional)
        Pam butter or olive oil flavored non-stick spray 

        DIRECTIONS:

        1.) Rinse and boil Miracle Rice as directed

        2.) Spray a nonstick sauté pan with Pam

        3.) Add the rice and garlic to the pan, sauté with a little salt and pepper until the garlic is just about cooked. 

        4.) Add the chopped spinach into the rice and sauté. Keep stirring and mixing the spinach with the rice, adding some Pam as it wilts down (it gives it that buttery flavor).

        5.) Add salt and pepper to taste and a good squeeze of fresh lemon juice. Sauté until done.

        Note: I will also add some fat free Feta cheese when I have it. ENJOY!
