Pumpkin Fettuccini Alfredo

"Can’t get enough of pumpkin? I don’t blame you! Pumpkin packs a punch of Vitamin A, Fiber, and makes any dish more homey and festive. For a “Quick & Easy” and healthier spin on the classic Fettuccini Alfredo, I’ve used Miracle Fettuccini and The Laughing Cow Cheese Wedge

INGREDIENTS

1 Bag of Miracle Noodle Fettuccini
1/4 -1/2 Cup Libby's Pumpkin Purée
Cheese: 1 Laughing Cow Cheese Wedges
Several splashes of water or stock to loosen sauce.
Sautéed Veggies: Onion, Mushroom
Spices: Garlic, Pepper, Paprika, Thyme

INSTRUCTIONS

1.) Sauté veggies in a pan and add spices.
2.) Add pumpkin puree and cheese wedge. Combine ingredients and continue cooking until Cheese is melted. Splash in liquid if need be.
3.) Add Miracle Fettuccini and integrate noodles with sauce.

you could add apple pieces , dried cranberries, pecan pieces instead of the veggies

cut out pepper and some garlic ,add pumpkin spice and sweetner
