Sweet and Savory Miso Bowl

"Summer is here and that means it’s squash season! I fell in love with these ‘roly poly’ zucchinis at our local farmer's market and knew what I wanted to make as soon as I got home: Sweet and Savory Miso Bowl!"

INGREDIENTS:

2 round zucchinis 
¼ cup chicken or vegetable broth
¼ cup almond milk
½ bag Organic Miracle Noodle Rice
1 tablespoon sweet miso paste
1 portobello mushroom cap
1 stalk green onion
2 radishes
¼ tsp soy sauce
¼ tsp crushed garlic
¼ tsp chopped ginger
Simply Beyond Lemongrass Herbal Spray
1 teaspoon agar agar or powdered gelatin 
Salt and pepper to taste

METHOD:

1.) Preheat your oven to 375 Fahrenheit.

2.) Drain, rinse, and dry half a package of Miracle Noodle Rice. Set aside.

3.) Wash the round zucchinis and dry. Slice the top off approximately ½ inch from stem. Hollow out the zucchini creating a hollow bowl shape. Leave around ½ inch thickness so that the zucchini keeps its shape and is stable while cooking in the oven. Save the zucchini material that you scoop out and set aside.

4.) Spray the inside of the zucchinis with one spritz of lemongrass herb spray and the outside of the zucchini with coconut spray. Place on a baking sheet lined with parchment. Cook in the oven for 10 minutes. Once cooked, set aside and let cool. 

5.) Slice mushrooms into ½ wide pieces and set aside. Spray a small pot with coconut spray and place on medium heat. Once hot, place in the miso, innards of the zucchini bowls, soy sauce, garlic, ginger, mushrooms and miso. Cook for 3 minutes until fragrant.

6.) Add milk and broth and cook until mixture begins to bubble. Turn the heat to low and cook for 10 more minutes. Remove from heat and take out ½ of the cooked mushrooms and set aside. Pour the contents of the pot into a blender and blend until smooth. Add agar agar gradually while blending. 

7.) Pour blended mixture into zucchini.

8.) Dice the mushrooms and place into zucchinis.

9.) Spoon in 2-3 tablespoons of Miracle Rice into zucchinis and lightly stir the mixture.

10.) Top with green onions and sliced radishes for a nice crunch.  Lightly spritz the zucchini bowls with a final spray of lemongrass.
