INGREDIENTS:
Amounts to preference
Zucchini ribbons
Miracle Rice, prepared according to package
Celery
Onion
Cherry tomatoes
Olives
Bell peppers
Avocado
Sun-dried tomatoes are a great addition too!

DRESSING:
Mix the following
2 tbsp apple cider vinegar
4 tbsp extra virgin olive oil
1 tsp dijon mustard
Squeeze of lemon
Salt and pepper

Note: I recommend adding a source of protein, so it works as a blood sugar balancing meal that checks off fibre, protein, and healthy fats!
