Ingredients
- 3 pks Miracle Spaghetti
- 1 T olive oil
- 6 large (or x-large) eggs
- 1/2 cup Parmesan cheese
- salt
- 8 oz. Pepperoni chopped
- 1/4 t pepper
- 1/2 cup chopped parsley
- Optional: 1/2 cup Black olives or pine nuts
- about 10 minutes of prep time including Miracle Noodles working together
Method
- Oven 350 degrees
- Oil dish ( 12" x 8" or 9 x 9")
- Prepare Miracle Noodles Spaghetti as directed. (Rinse-boil for 1-2 minutes-put in a dry pan until the spaghetti sings)
- Mix eggs, cheese, pepperoni, pepper, (olives fo pine nuts), and salt, together in a large bowl. Add prepared Miracle noodle's, use kitchen scissors to cut spaghetti. Mix all thoroughly.
- Pour into oiled dish
- Bake in 350 degree oven for 50 minutes or until lightly browned.
- Goes well with a garden salad.
- We like using Turkey pepperoni (especially by Applegate)
- also adding hot sauce on the side. Enjoy!
