Cold Miracle Egg White Noodle Salad with Citrus Ponzu Dressing

INGREDIENTS:

2 packages Miracle Noodle Egg White Spaghetti, drained and rinsed
1 (10 ounce) bag vegetable slaw mix 
1 red bell pepper, thinly sliced
2 small Persian cucumbers, julienned or thinly sliced
½ cup fresh cilantro, chopped
¼ cup fresh mint, chopped
¼ cup San-J Citrus Ponzu Tamari Splash
2 teaspoons toasted sesame oil
2 teaspoons maple syrup or honey 
Garnish: toasted sesame seeds and lime wedges

DIRECTIONS:

1.) Drain, rinse, and pat dry both packages of Miracle Noodle Spaghetti per the package directions. Add to a large mixing bowl.
2.) Toss noodles with slaw mix, red bell pepper, cucumbers, cilantro, and mint.
3.) In a small bowl, whisk together ¼ cup Citrus Ponzu, 2 teaspoons sesame oil, and 2 teaspoons maple syrup or honey. Pour dressing over noodle mixture and toss until everything is well-coated.
4.) Serve immediately or chill for 30 minutes. Garnish with sesame seeds and lime wedges.
