Low Carb Jumuk Bap

1 packet Miracle Rice
2 to 3 tsp psyllium husks
2 to 3 tbsp water
2 tsp sesame oil
1 tsp salt
150 g Kimchi
Handful of roasted seaweed
Some cherry tomatoes & lettuce
for garnishing


1.) In a small pot, add miracle rice, water, salt, psyllium husks and cook over low heat until sticky. Add more water if necessary.

2.) Remove pot from heat, add kimchi and its juice, sesame oil, roasted seaweed and mix to combine. Adjust taste accordingly.

3.) Wet the bowl first (for easy release) then spoon rice into the bowl. Flatten the top then invert onto a plate.

4.) Garnish with cherry tomatoes and lettuce.
