Shrimp Fried Rice

1 packet of Miracle Rice
1 chicken thigh (deboned & cubed)
Handful of medium shrimps (deveined)
Handful of bean sprouts
1 tbsp Minced garlic
1 tsp Minced ginger
3 egg yolks or 2 whole eggs
2 to 3 tbsp cooking oil
1 to 2 tbsp soy sauce or tamari
1 to 2 tbsp fish sauce (optional)
1 tbsp chili paste (optional)
Salt & Pepper to taste
Spring onions for garnishing


1.) Prepare Miracle rice by rinsing, draining and dry roast in a pan without oil until squeaky to remove excess water. Set aside.

2.) In a pan, stir fry the garlic and ginger until fragrant then add the chicken. Stir fry until the chicken is almost cooked then add the shrimps. Cook for awhile then add the rice, seasonings and mix well.

3.) Push rice aside and add the eggs. Scramble the eggs until almost dry then mix with the rice. Adjust taste accordingly.

4.) Add the bean sprouts and cook for awhile.

5.) Dish up and sprinkle with chopped spring onions.
