For the Asian Noodle Salad
1-2 packs of Miracle Noolde Thai Tom Yum Ready to Eat Meal
1/3 cup shredded carrot
1/3 cup sliced cabbage
1/3 Red bell pepper, chopped
1/4 cup cilantro
1/4 shelled edamame
2-3 green onions, sliced
For the Peanut Dressing
2 tbsp peanut butter
1 tbsp honey
2 tbsp sesame oil
2 tbsp rice vinegar or any other plain vinegar
4 tbsp soy sauce or coco aminos
1 tsp ginger juice
1 tsp minced garlic
2 tsp Sriracha sauce
1/2 lime squeezed
1 tsp dried chili flakes (optional)
1. Cook the Thai Tom Yum @miraclenoodle per packaging instructions. If you want a chilled noodle salad place into fridge for 10-15 mins.
2. If you haven’t already, prep your veggies.
3. In a small bowl combine the peanut butter, honey, rice vinegar, sesame oil, soy sauce, Sriracha sauce, ginger juice, garlic and lime juice. Place noodles in a large salad bowl.
4. When ready, add the sliced red cabbage, carrots, green onion, cilantro and edamame to the Miracle Noodle and drizzle with spicy peanut sauce. Toss to combine and garnish with peanuts if you wish.
