Days like this when I'm running behind on work, my cats are extra needy and crying at me (and I'm trying to convince them to quiet down while I work, cause kibble costs $$$) a zillion interruptions, MONDAY!...I head straight for comfort food. It can't be helped, that's just where my mind goes ASAP.
The good thing?? Keto has PLENTY of comfort food options! Ones that are rich, filling, satisfying. That helps me tame my inner stress monster. I just make 1 portion. That's what I normally do anyways since I work from home and can cook daily. On days like this, it is especially helpful. It keeps me from over-eating/mindless eating/bingeing.
Today I made Broccoli & Chicken Alfredo, extra cheese. The extra cheese for a little extra comfort, haha. Super easy! You guys know I don't like fussy food over here."
INGREDIENTS:
1 Bag of Miracle Noodle Angel Hair
50 grams of chopped broccoli
Salt, pepper, garlic powder
1/2 to 1 cup chopped chicken
1 oz of cream cheese
2 - 3 tablespoons of heavy cream
Parmesan cheese - shredded
Mozzarella cheese, shredded
DIRECTIONS:
1. Prepare Miracle Noodle Angel hair. Rinse for 1 min, drain, and dry fry in a hot pan till all water is absorbed.
2. Add chopped broccoli to pan. Season with salt, pepper, garlic powder.
3. Add in cream cheese and heavy cream. Stir until combined and warm, then pour into a baking dish.
4. Top with Parmesan and mozzarella cheese. Broil until cheese is golden.
