Buffalo Chicken Love My Rice!

Love My Rice from Miracle Noodle is so versatile! 

Perfect for stuffing peppers, mushrooms, or in an avocado!

Serves 6


  • 2 Packages of Love My Rice
  • 2 Cups cooked chicken, shredded or diced
  • 2 Eggs
  • 1/4 cup + 1 Tbs of Buffalo Sauce
  • 1 Stalk of celery, diced
  • 1 tsp Garlic powder
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • Coconut Oil for greasing baking dish
  • Green onions for garnish
  • Cilantro for garnish


  1. Preheat over to 350 degrees.
  2. In a large bowl, combine chicken, buffalo sauce.
  3. Add in whisked eggs and combine.
  4. Add in Love My Rice, celery, onions and seasonings and mix together well.
  5. In a greased medium sized bakers dish, pour the mixture in and evenly spread.
  6. Bake at 350 degrees for 25 minutes.
  7. Top with green onions and cilantro
  8. Serve on it's own, in bell peppers, stuff in a portobello mushroom or in an avocado.
