Miracle Noodle Fan Seung Hee Lee is sending us a delicious meal that's easy to pull together in a pinch. Simply cook off a batch of chicken with her guidelines during your meal prep this weekend, and add it to her ginger broth with our low-carb pasta!

"Craving noods on a bad day? Worry not!! Konyaku noods from Miracle Noodle in homemade chicken ginger broth seasoned with Kikkoman USA Hontsuyu, atopped shredded chicken, white kimchi, 6 min egg, and few Thai chiles for an extra kick.

Believe it or not, this dish can be "assembled" in 2 minutes. Get in the habit of boiling a whole chicken on a weekend night - I use instant pot slow-cook mode to cook a @whiteoakpastures chicken overnight for 10 hours with a handful of ginger and 10-15 black peppercorns. I get delicious white meat & restorative broth for the week!!

Lastly, konyaku/shirataki noodles need no cooking time. Just rinse it with hot tap water before use. Yay!!! Easy, delicious weekday dinner in no time."
