Chocolate Chip Cookies

Chocolate Chip Cookies

Oh WOW! Just, WOW! Alexia made up a batch of keto cookie goodness with our konjac flour! It’s the perfect zero net-carb binder for all your baking and cooking needs.

Head to the front porch for some Chocolate Chip Cookies. We added some konjac flour to the mix. If you’ve ever had Miracle noodles that’s what they’re made from and we are loving it!!! Makes the cookies even more gooey straight out of the oven and they refrigerate up perfectly. So so yummy! You’ll want to save this recipe. It’s also Keto friendly. And has added fiber from the konjac and lots of collagen protein goodness. So good you may have to hide a few. LOL.

Recipe by Alexia Aleman AKA @accidentalparisiancook.

INGREDIENTS:

(Makes 16 Cookies)
Aprx 6 Carbs Per Serving.

 3/4 cup chocolate chips
1/2 cup fine almond flour
1/4 cup coconut flour
1/4 cup coconut oil
1/4 cup coconut sugar
3 scoops collagen peptides
3 tbsp Miracle Noodle Konjac Flour
1 tsp baking Soda
1 egg

DIRECTIONS:

1. Preheat oven at 350 F.

2. In a medium bowl combine dry ingredients. Flours, Peptide, Baking Soda, and Konjac.

3. Mix Eggs on high till they begin to mousse aprx 1-2 min. Add Coconut Sugar till thoroughly blended. Add Coconut Oil and mix. Then, add dry mixture a couple tablespoons at a time while mixing.

4. Fold in chocolate.

5. Spoon onto a parchment sheet. Cook for 14 minutes. The edges will start to brown.

6. Remove parchment and place on a cool counter top. Let cool and enjoy. They may feel a tiny bit too gooey at first touch. Once you eat them, you’ll taste the perfection of texture.

Note: I included cause konjac flour cause seems to help my gut for some reason. Maybe cause it’s all fiber? Not sure the reason honestly. But, anything that helps my gut feel better I’m all about cause I can use all the gut help I can get. Plus, we just made the cookies even healthier. Win win. You can also sub the chocolate chips with Yacon Sweetened Cacao Nibs (made by Alovitox) if you want to lower the carbs To 2-3 p/s. I alternate between the two. They’re both good.⁣⁣
