"Today's Meatless Monday Menu: Coconut Miracle Rice with veggies! So simple, so easy, and super tasty!"

INGREDIENTS:
1 package of Miracle Rice
1/2 can of coconut milk
1 tsp of xanthan gum
1 cup of assorted veggies
DIRECTIONS:
1. Follow instructions as directed on Miracle Rice packaging and keep rice in pan.
2. Cook your steamed veggies. (I cheated and used the microwaveable kind, hehe.)
3. Add your coconut milk to the rice and mix in xanthan gum and then add your veggies. If you're "strict" keto, then lay off of the carrots.
