1.) Cut up your broccoli into florets and place onto heavily oiled jellyroll pan.
2.) Spray generously with garlic spray and roast florets about 20 mins or until florets have slightly browned.
3.) While your broccoli is roasting cut tomatoes in half and scoop out most of the meat in the tomatoes.
4.) After broccoli is done set aside and place tomatoes on sheet pan face up and lower temp to 375.
5.) Spray tomatoes generously with garlic spray and sprinkle with salt. Let roast for about an hour until tomatoes turn brown and if needed turn tomatoes over and roast for another 15 mins. When they are done cut into bite size pieces.
6.) While your tomatoes are roasting rinse and drain your noodles. Place noodles into a wide bottom pan and simmer for about 20 mins until all liquid is gone and noodles start to stick. As soon as they start to stick lower your heat to low and spray the noodles with your garlic spray and toss to coat.
7.) Adjust how much spray to your taste. Add your tomatoes with their juices and toss and then add your broccoli and season with salt and pepper and taste. Add more spray if necessary.
