INGREDIENTS:
Serves 4
1 can full-fat coconut milk
2 or 3 tbs of organic Mekhala Living Thai red curry paste
3 to 4 cups of chicken broth
4 cups of chopped bok choi or napa cabbage
1/2 cup of sliced red pepper
2 cloves of garlic minced
2 tbs of avocado oil
1 tsp of Mekhala Living lemongrass turmeric paste or juice of half lime
2 tbs of fish sauce
1 tbs of fresh grated ginger
2 packs of Miracle Noodle fettuccini, prepared according to package
Cilantro to garnish
DIRECTIONS:
1. Prepare Miracle Noodle according to the package. Set aside.
2. Heat the oil and sauté the garlic and ginger until fragrant.
3. Add chicken stock and fish sauce. Stir.
4. Add the coconut milk and the rest of the ingredients until thoroughly warmed through, noodles included.
