Japchae with Miracle Fettuccine

"YES!!!! Such a tasty and easy dish, thank goodness I have enough to make more tomorrow. What I love about this dish is that the veggies you add in can be pretty flexible. Most common additions are mushrooms, onions, carrots, cabbage, green onion, spinach. But you could also do broccoli, Napa cabbage, kale, snow peas, etc."

INGRDIENTS:
Serves 1

1 package of Miracle Noodle Fettuccine, rinsed and drained
2 - 3 oz thin sliced beef or pork
1 garlic clove, minced
1+ tablespoons soy sauce
Sweetener of choice
3/4 tablespoon sesame oil
1 tbsp coconut oil (or more if you need to up your fat!)
About 1 cup of thinly sliced veggies - your choice. I used carrots, mushrooms, and cabbage.

DIRECTIONS:

1. Fry the rinsed noodles in a DRY pan over med-high heat until most of the moisture is gone. Set aside on a plate.

2. Add the coconut oil, garlic, and veggies to the pan and saute. When they are about 1/2 way cooked, add in the meat and continue to cook.

3. When the meat is nearly done add in the noodles, soy sauce, and about the equivalent of 1.5tsp of sugar to start. Stir and cook a little longer, then taste a COMPLETE bite (noodle, veggie, meat). Add more sweetener and soy sauce if needed.

4. Take the pan off the heat and then add the sesame oil. You can also add hot pepper flakes or oil, and sesame seeds if you wish.
