Keto Berry "Bread" Pudding

INGREDIENTS:

2 cups of mixed berries (strawberry, blackberry, and raspberry)
1/2 cup Lakanto monk fruit sweetener
1 SmartBun

DIRECTIONS:

1. Cook the berries and sweetener over medium heat until they release their juices. Remove from heat.

2. Spread some berry syrup on the bottom of a dish big enough to hold the bread (I used a glass storage dish with the lid).

3. Add one half of the SmartBun on top the syrup. Spoon the berry mixture and 1/2 of the syrup this bun. Top with the other half of the bun. Pour remaining syrup on top.

4. Refrigerate for 4-6 hours. Top with whipped cream!
