"Nothing fancy here. Just a Keto Chicken Spaghetti Casserole made with no carb shirataki noodles. I was actually going to make something else today but bought the wrong chicken. So I had to think fast and came up with this easy and delicious dish. Trying my best to stay away from all this gooey cheesy goodness. But, I know the kid and husband will LOVE it."

        Serves 6 - {6.43 grams net carbs per serving}

        INGREDIENTS:

3 (7 oz bags) of Miracle Noodle Angel Hair
1 1/2 lbs. cooked and shredded chicken
        2 tablespoon butter⠀⠀⠀
        1 medium onion, diced
        2 garlic cloves, minced
        1 (10 oz) can Rotel
        4 oz. cream cheese
        1/2 cup chicken stock
        1/4 cup heavy cream
        1 teaspoon of Season All
        1 egg, beaten
        1 1/2 cup shredded cheddar

        DIRECTIONS:

        1. Prepare Miracle Noodle according to package and set aside.

        2. Melt butter in a pot on medium heat.

        3. Saute onion and garlic. Once softened, and Rotel. Cook for several minutes, then add cream cheese. When cream cheese has melted, add chicken stock, heavy cream, and Season All.

        4. Add noodles. Let sit at low-medium heat for several minutes.

        5. Add egg, quickly mixing it in so it doesn't scramble. We just want to thicken the sauce with the egg. Add in chicken and stir.

        6. Heat oven to 350. Pour mixture into baking dish. Top with cheese. Bake for about 10-15 minutes or until bubbly and cheese has melted. Garnish with chopped parsley and serve up!
