Keto-Friendly Sushi Rice
Yields for 4 sushi rolls
INGREDIENTS:
1 bag of Miracle Rice
1 package of Riced Cauliflower
6 oz of softened cream cheese
1 to 2 tbsp of coconut aminos or soy sauce
2 tbsp of rice wine vinegar
DIRECTIONS:
1 Sauté miracle rice noodles and riced cauliflower until water has evaporated.
2 Add coconut aminos and rice wine vinegar and cook until combined.
3. Turn off heat, let cool about 5 mins and add cream cheese until all of the rice is combined with itself.
Keto-Friendly Eel Sauce
INGREDIENTS:
2 tbsp coconut aminos or soy sauce
2 tbsp white wine
2 tbsp of
So Nourished Inc gold brown sugar or brown sugar substitute of choice
1/4 tsp of xantham gum to thicken
DIRECTIONS:
1. Add all ingredients into a pot and bring it to a boil until sugar dissolves. -
2. Sprinkle your xantham gum and stir to combine. As it continues to reduce, it will thicken. Turn off heat.
3. Serve immediately on top of sushi. As it sits, erythritol tends to crystallize and harden but just reheat with 1 to 2 tbsp of water, and it will liquefy again.
