Keto Lemongrass Chicken Meatballs

INGREDIENTS:

1 lb ground chicken
1/4 cup grated onions
2 teaspoons grated ginger
2 teaspoons minced lemongrass
2 teaspoons fish sauce
1 tablespoon Thai chili garlic sauce
1 tablespoon coconut aminos
1/4 teaspoon salt
2 packs Miracle Noodle Angel Hair Noodles
1 clove minced garlic
2 cups chicken broth
1 cup water
2 tablespoons lime juice
Scallions, basil, and cilantro for garnish

DIRECTIONS:

1. Prepare noodles by rinsing them. in a large skillet set to low medium heat. Cook garlic and ginger for 3 minutes. Add in the aminos, Thai Chili garlic sauce, fish sauce, broth and water. Turn the heat up to a boil and allow the mixture to reduce for 8 minutes. Add in the noodles and allow to cook as you make the meatballs.

2. In a large bowl, combine chicken, onion, ginger, lemongrass, Thai chili garlic sauce, aminos, fish sauce, and salt. Roll into 1.25inch balls and place on foil lined baking sheet that has been sprayed with nonstick spray. Bake at 425 for about 12-15 minutes or until internal temperature reaches 165-degrees fahrenheit.

3. Stir the lime juice into the noodle mixture and turn off the heat. Prepare your dish by playing the noodles and broth, followed by the meatballs, and then add your garnishes. Enjoy!
