Keto-Paleo Chicken Pad Thai

"I posted about Miracle Noodle on my stories a few weeks ago, but I wanted to share more about how amazing they are. The noodles are made from the konjac plant, which I learned after some heavy googling, is a root vegetable similar to a yam. There are only a few ingredients in the noodles, and they're both keto and paleo compliant, with just 20 calroeis and 6 carbs in the entire bag. Plus, they legit tast like pasta...way more than other alternatives like chickpea or lentil. The first dish I made with them was this Pad Thai-Style dish, and it was perfection."

INGREDIENTS:

1 bag of Miracle Noodle Angel Hair
3 chicken drumsticks⁣⁣
1 bell pepper, sliced⁣⁣
1 cup broccoli florets⁣⁣
1/4 red onion, sliced⁣⁣
1/2 cup snap peas⁣⁣
Cilantro⁣⁣
1 Tbs tamari (or soy sauce)⁣⁣
1 Tbs almond butter⁣⁣
1 Tbs tahini⁣⁣
1/2 Tbs my chile crisp or just red pepper flakes⁣⁣
1/2 lime, juiced⁣⁣
1/2 in cube grated fresh ginger⁣⁣
1/2 tsp sea salt⁣⁣
1/4 tsp garlic powder⁣⁣

DIRECTIONS:
⁣⁣
1. Preheat oven to 350. ⁣⁣
⁣⁣
2. Add tamari, almond butter, tahini, chile, lime, ginger, salt, and garlic powder to a blender and puree until smooth. ⁣⁣
⁣⁣
3. Toss drumsticks in half of the sauce and transfer to a parchment-lined baking sheet. Bake for 25 min, flipping halfway through. ⁣⁣
⁣⁣
4. While chicken is cooking, heat a skillet over a medium flame with a bit of olive oil. Add broccoli, pepper, onion, and peas and season with a bit of salt and pepper. Sauté for 5-7 min, stirring frequently. ⁣⁣

5. De-bone chicken once finished cooking and add to vegetables with noodles and remaining sauce. Sauté for another minute, add to a bowl and garnish with lime and cilantro.
