Keto-Paleo Chicken Pad Thai

1 bag of Miracle Noodle Angel Hair
3 chicken drumsticks
1 bell pepper, sliced
1 cup broccoli florets
1/4 red onion, sliced
1/2 cup snap peas
1 Tbs tamari (or soy sauce)
1 Tbs almond butter
1 Tbs tahini
1/2 Tbs my chile crisp or just red pepper flakes
1/2 lime, juiced
1/2 in cube grated fresh ginger
1/2 tsp sea salt
1/4 tsp garlic powder
1. Preheat oven to 350.
2. Add tamari, almond butter, tahini, chile, lime, ginger, salt, and garlic powder to a blender and puree until smooth.
3. Toss drumsticks in half of the sauce and transfer to a parchment-lined baking sheet. Bake for 25 min, flipping halfway through.
4. While chicken is cooking, heat a skillet over a medium flame with a bit of olive oil. Add broccoli, pepper, onion, and peas and season with a bit of salt and pepper. Sauté for 5-7 min, stirring frequently.
5. De-bone chicken once finished cooking and add to vegetables with noodles and remaining sauce. Sauté for another minute, add to a bowl and garnish with lime and cilantro.
