Low-Carb Fried Rice
Make this favorite take out side at home and make it work for your low-carb life. You’ll enjoy this low-carb fried rice.
1 packet Miracle Rice from Miracle Noodle
3 egg yolks or 2 whole eggs
1 chicken boneless whole leg (cubed)
1 cup romaine lettuce (cut into strips)
1 tbsp minced garlic
1 fresh red chilies (optional)
1 tbsp fish sauce
Salt & pepper to taste
Sweetener to taste (optional)
Spring Onions for garnish
1. Prepare miracle rice - rinse, drain and boil for 2 mins. Drain and dry roast in pan without oil until squeaky to remove excess water. Set aside.
2. Stir fry chicken with cooking oil until slightly browned then add garlic and sautee until fragrant. Add rice, seasonings and cook for a while.
3. Push rice aside, add eggs and scramble until almost dry then mix with rice. Adjust taste accordingly. Lastly, add lettuce and cook for a while.
4. Dish up and garnish with spring onions.
