"Whipped up some vegan mac and cheese with Miracle Noodle today! These are a Japanese style plant-based noodle that are kind of trending right now due to their "0 calorie" nutrition label. I personally don't count my calories or eat a "low-carb diet," but I thought I'd give them a try just to see what they're like. Overall, they were pretty good!
Again, I'm not suggesting that it's necessary to be eating a 0 calorie food by any stretch. But, if you want to try something different, need to watch your carbs for a medical reason, or if you're going on a cut, these noodles might be a good option for you!
I made an easy vegan mac and cheese sauce and threw in some broccoli to sneak in some greens."

INGREDIENTS VEGAN MAC SAUCE:

2 tbsp tahini
1 clove garlic
1/4 cup dairy-free milk
A handful of raw cashews (unsalted)
3 tbsp nutritional yeast
Salt and pepper
1 tsp turmeric (for color & flavor)
OTHER INGREDIENTS:
1 pack of Miracle Noodle Fettuccine
1 cup of steamed broccoli florets
DIRECTIONS:
1. Prepare Miracle Noodle Fettuccine according to package. Set aside.
2. Blend all sauce ingredients in a high-speed blender.
3. Heat in a saucepan along with broccoli over Miracle Noodle and enjoy!
