Unicorn Pho Bowls!
I don't think I've ever been so excited to share something with you.
You want to know how the noodles turn colors, right?? It's so easy - you boil them with a bit of red cabbage to get the blue color, then the lime turns them unicorn pink. (Credit to @theindigokitchen for the technique.)
I could entertain myself doing this for multiple meals in a row, so it's good this Miracle Noodle shirataki is zero calories. I had to buy a whole pound of bean sprouts and only used a few ounces in this bowl, so I think we all know what I've be eating all weekend.
Recipe by Rebecca Spitzer AKA @thelowcalorielife.

Hoisin sauce, sesame oil, sriarcha
1. Rinse Miracle Noodle for 15 seconds, then boil in water with a couple cups of red cabbage. Drain and set aside.
2. Assemble all your veggies into the bowl. Top with your favorite sauce.
3. Place noodles on top of the bowl.
