"I meal prep every week even during offseason. What can I say, I’m a creature of habit. I tend to have extra meat and veg going into the weekend, but I am for sure not throwing these nibbles away! I pull out all the leftovers and make these deli sushi rolls! Salty pastrami with crunchy carrots all rolled up with chewy shirataki noodles. These make the perfect weekend snack without having to repeat the same meals I had Monday-Friday."

INGREDIENTS
1 bag of Miracle Noodle Fettuccini
1 medium carrot
4 oz pastrami slices
Whole grain Dijon mustard
Handful of mixed greens
Cocktail skewers (love Trader Joe’s jarred skewers)
DIRECTIONS:
1.) Rinse, drain, and pat dry Miracle Noodles. Microwave noodles in a small bowl for 1 minute. Drain and pat dry a final time. Set aside.
2.) Lay a slice of pastrami down and place julienne carrots, a couple of greens, and a fork full of noodles. Top with mustard.
3.) Carefully roll the pastrami and close with a cocktail skewer. Repeat and enjoy!
