Miracle Fried Rice

INGREDIENTS:
(Makes 2 servings)
1 bag Miracle Rice
1/2 yellow onion, chopped
Green, red, yellow peppers (about 1/2 of each), sliced
1 clove garlic, minced
5 shallots, whites, and greens separated
1/2 cup frozen, shelled edamame
2 tsp chili garlic sauce
2 tsp soy sauce, tamari, or liquid aminos
For garnish:
Crushed red pepper flakes
Shallot greens
Toasted sesame seeds
DIRECTIONS:
1. Spray pan with non-stick olive oil spray and sauté onions, peppers, edamame, garlic, and shallot whites.
2. Add chili garlic sauce and soy/tamari/aminos
drain and rinse miracle rice.
3. Once vegetables are cooked to desired consistency, add in Miracle Rice continue to cook for about 2 minutes.
4. Serve and garnish with shallot greens, sesame seeds, and red pepper flakes if desired.
