Miracle Matcha No-Bake Energy Bites

Miracle Noodle Ambassador, Teri Tenseth Market, came up with this great snack that will fuel you with healthy Omega-3's, MCT Oil and fiber! Perfect before a workout on the run paired with protein, or during long-distance training. Made with Miracle Matcha Health Mix-in which packs super-foods such as chia seed, white matcha tea, goji berry and flax seed. Almonds, dates, cinnamon, nutmeg, and coconut make this a delicious food sure to fill you and fuel you without any added sugar!

Serves 12

You will need:
* Food Processor
* Parchment Paper
* Baking Sheet
* Spoon

INGREDIENTS:

1/2 cup of raw almonds
15 pitted and chopped dates
1 & 1/2 tablespoons of coconut oil
1 teaspoon of cinnamon (Teri used Saigon cinnamon)
1 teaspoon of nutmeg
A dash of salt
2 tablespoons of Miracle Matcha Health Mix-in
Splash of water
1/3 cup of shredded unsweetened coconut + more for rolling

DIRECTIONS:

1.) Place almonds in food processor and pulse till chopped into small pieces (do not over process).
2.) Add in all other ingredients and blend in processor to well incorporated.
3.) Line a baking sheet with parchment paper.
3.) Take a tablespoon and form 12 equal sized balls and roll in remaining coconut. Place balls on lined baking sheet.
4.) Place the energy bites in the fridge on the lined baking sheet for at least 40 minutes.
5.) Enjoy!

Note: The energy bites should last two weeks in a sealed container in the refrigerator.
