INGREDIENTS:

1 package Miracle Rice
4 tablespoons Swerve, divided
1 teaspoon vanilla extract
1 container Plain Peak Yogurt
1/2 small package of blackberries⠀⠀
Almonds for crunch (optional)
DIRECTIONS:
1. Cook Miracle Noodle Rice according to package directions but at 3 tablespoons of Swerve to the water you boil them in. Drain and cook off the remaining water in a dry saucepan over medium heat. Remove from heat and stir in vanilla. Set aside to cool.
2. For blackberry sauce, add blackberries to saucepan with 1 tablespoon of Swerve. Cook over medium heat until berries have released their juices and become syrup. Set aside to cool.
3. Later your parfait with rice, yogurt, blackberry sauce, nuts and repeat layers.
