"This was our first batch and we loved it. We only blended 1/2 the bag of miracle rice so that the other half could be used for a tapioca texture. You can blend the whole bag if you're tapioca hater."
1 bag miracle rice
7 oz organic coconut cream
2 and 1/2 tablespoons xylitol
2 teaspoon organic cassava starch
1 pastured egg yolk
Pinch of sea salt
2 teaspoons of organic vanilla extract
Cinnamon to taste
1.) Blend 1/2 bag of miracle rice with 7oz of coconut cream.
2.) In a saucepan add 1 teaspoon of Ghee and other 1/2 miracle rice from bag. Heat till all fluid is evaporated.
3.) Add starch
4.) When starch is combined thoroughly add the blended mixture of rice and coconut cream bring to a simmer.
5.) Combine Xylitol, vanilla extract and salt in saucepan, stir thoroughly and continue to simmer.
6.) Simmer till mixture thickens to desired consistency. 10 mins tops.
7.) Remove from stove and let cool for approx 5 mins.
8.) Temper in egg yolk and stir vigorously
9.) Chill & Enjoy!
