If youโre too busy to prepare your own meals, this quick and easy Pad Thai is perfect for you. The noodles are ready in 60 seconds. Just add them to the saucy stir-fried vegetables and youโll have a satisfying meal.
INGREDIENTS:
๐๐ฐ๐ณ ๐ต๐ฉ๐ฆ ๐๐ข๐ฅ ๐๐ฉ๐ข๐ช
3 packs Miracle Noodle Pad Thai
4 sweet mini red peppers
6 broccolini ( include chopped stems)
1/2 C shredded carrots
1/3 C roasted cashews
1/2 shallot (minced)
1 tbsp green onions
๐๐ฐ๐ณ ๐ต๐ฉ๐ฆ ๐๐ข๐ถ๐ค๐ฆ
1/4 C Date Syrup
2 tbsp Soy Sauce
1 tbsp tbsp Tamarind Paste
1 tbsp almond butter
1/2 tbsp minced garlic
1 tsp ginger powder
๐๐ก๐ฆ๐ง๐ฅ๐จ๐๐ง๐๐ข๐ก๐ฆ:
1. In a medium sized bowl, mix the ingredients for the sauce and set aside.
2. Heat a tablespoon of oil over medium high heat. Add the veggies โ stir fry for 2-3 minutes or until tender-crisp. Then pour on the sauce.
3. Cook the Miracle Noodle Pad Thai in the microwave for 60 seconds then pour into veggie stir fry. Stir to combine.
4. Serve and top with roasted cashews and chopped green onions.
