Shrimp Summer Rolls

This Shrimp Summer Roll is a great way to get additional fiber and your noodle fix. If you’re keto, you can swap the rice paper for lettuce or try a coconut wrap.

INGREDIENTS:

3 rice paper wraps
Handful of Miracle Noodle Angel Hair, rinsed, boiled, and dried
Carrots, shredded
Shredded cucumber
Water chestnuts, diced
Mushrooms, cooked and diced
Premade shrimp
Romaine lettuce 

DIRECTIONS:

Note: Rolling it up was a little tricky, and sticky, but definitely got the hang of it after a couple.

1. All you have to do is dunk the entire paper until water and place on plate to soften, add all the ingredients, and roll it up!

INGREDIENTS FOR PEANUT SAUCE:

2 tbsp peanut butter
2 tbsp GF soy sauce
2 tbsp rice vinegar
1 tbsp water
1 tsp sriracha 

DIRECTIONS:

Combine all items and stir. Add more heat if needed.
