Fishing for a dinner idea? Why not try a noodle salad packed with protein and a kick?
INGREDIENTS:
This recipe serves 4
2 packs Miracle Noodle Angel Hair
1 pound cooked shrimp
4-5 mini bell peppers
2 green onion stalks
3 garlic cloves, minced
1 tablespoon cilantro. chopped
2-3 Thai chili peppers
Vinaigrette
3 1/2 tablespoons tamari or soy sauce
1 tablespoon fish sauce
2 tablespoons rice wine vinegar
2 teaspoons toasted sesame oil
3 tablespoons canola oil
Juice of 1 lime
3 tablespoons water
1 teaspoon swerve or sugar to taste
1 teaspoon ginger, grated
1 teaspoon lemongrass, finely minced
DIRECTIONS:
1. Prepare noodles according to package and chill.
2. Meanwhile, combine all the dressing ingredients.
3. After noodles have chilled, transfer them to a bowl and fold in remaining salad ingredients. Pour in dressing and toss.
4. Adjust seasoning to taste.
