Spicy Keto Pasta Salad

"I’ve seen a lot of requests for keto-friendly side dishes to take along to BBQs. I got an easy one for ya! This one is inspired by a favorite to many, The Pioneed Woman and it uses my favorite shirataki noodle, Miracle Noodle."

INGREDIENTS:

4 packages of Miracle Noodle Fettuccine
1/2 c mayonnaise
1/4 c heavy cream
1 chipotle pepper in adobo, minced + 1 t sauce
2 tablespoon apple cider vinegar
1 teaspoon salt + 1/2 t black pepper
Pinch of cayenne pepper
5 oz grape or cherry tomatoes, halved
8 oz smoked Gouda cheese, cubed
20 basil leaves, sliced
1/2 cup black olives

DIRECTIONS:

1. Cook the Miracle Noodle Fettuccine according to package directions. Set aside.

2. In a small bowl, mix mayonnaise, heavy cream, chipotle pepper, vinegar, salt, pepper, and cayenne.

3. In a large bowl, combine the pasta, tomato, Gouda, olives, and dressing. Adjust seasoning if necessary. Add basil at the end. Refrigerate before serving.
