Having takeout cravings? This quick and delicious keto and vegan Teriyaki Mushroom Noodle Stir Fry will satisfy your cravings. It’s packed with tasty veggies and noodle goodness.
1-2 leeks (chopped)
16 oz baby bella mushrooms (sliced)
1 bunch of broccoli florets
1 red bell pepper (sliced into strips)
5-6 cloves of garlic (minced)
1 tsp fresh ginger (grated)
2 tsp Coconut Secret ginger-turmeric sauce
2 tbsp Coconut Secret coconut aminos
¼ cup Coconut Secret teriyaki sauce
1 tbsp Trader Joe's organic toasted sesame oil
2 packs Miracle Noodle shirataki noodles
1. Prepare noodles (rinse and dry in a hot pan).
2. Heat up olive oil in a pan and add garlic, ginger, leeks, and mushrooms. Cook until mushrooms shrink down.
3. Add bell peppers, broccoli, and all the sauces, including sesame oil. Stir and cook a few minutes more before tossing in the noodles.
4. Serve garnished with red pepper flakes, scallions, and furikake seasoning (or sesame seeds).
