Vegan Spicy Peanut Bowl

INGREDIENTS FOR THE VEGGIE BOWL:

100 g Miracle Noodle Angel Hair
70 g thinly sliced cucumber⁣
62 g thinly sliced carrot⁣
75 g sliced bell pepper⁣
75 g frozen shelled edamame⁣
100 g frozen broccoli⁣
20 g TVP (textured vegetable protein)⁣

INGREDIENTS FOR SPICY PEANUT SAUCE:

16 g powdered peanut butter⁣
1 1/2 tsp soy sauce⁣
1 tsp sriracha

DIRECTIONS:

1. Rinse, then heat up the shirataki noodles in a nonstick pan. Add to a large bowl with sliced peppers, cucumbers, and carrots.⁣

2. Microwave the edamame and broccoli and add those to the bowl.⁣

3. Put the TVP in a separate bowl and add just enough hot water to cover it barely. Let it soak for a minute or two, then add the rehydrated TVP to the bowl with the other ingredients.⁣

4. Stir together the peanut powder, soy sauce, sriracha, and just enough water to thin the sauce to the desired consistency. Drizzle over the bowl and enjoy!
