By: Victoria Llamas Victoria says:A roux is a common thickening agent used often to make gravies and sauces. It is equal amounts of fat (margarine or butter or oil) and flour. It is very important to "cook/brown" the roux or you will end up with a "flour-y") tasting sauce.
1 heaping Tsp diced jalapeno peppers or other pepper
Canned or fresh. You choose how spicy you want it so you can increase or eliminate the peppers altogether
1.5-2c. non fat milk
2 slices low fat or chipotle cheese
1 slice low fat Colby cheese
1/3 c. plain bread crumbs
2 Tb margarine or butter melted
2 Tb parmesan cheese
Salt and pepper to taste
Method
Rinse Ziti noodles well and then boil for one minute. Drain and set aside.
In a sauce pan combine the butter and jalapenos. Cook till jalapenos are tender.
Add flour to make a roux over medium fire. Brown the flour add a little butter if roux is too thick.
Add 1.5 c milk while stirring constantly.
The sauce will thicken. If it is too thick add the rest of the milk.
While stirring add the slices of cheese and salt and pepper to taste.
Add noodles to hot cheese mixture. Pour mixture into a small baking dish.
In a small bowl add the melted butter, parmesan cheese and bread crumbs. Sprinkle mixture over macaroni and cheese mixture. Put in broiler till topping is browned. Enjoy!!
