Avocado Salsa with Miracle Rice

Avocados, anyone? We love em! Add them to our rice with fresh veggies for a great meal!

"I love avocado salsa for its refreshing and appetising flavors. It's also versatile as it can be eaten on its own, as a side, dip, wraps, tacos, salads, over beans or even rice. Yes, rice! So I added Miracle Rice from @miraclenoodle to give it volume, vibrancy, and deliciousness. You can also add some protein such as salmon, shrimps, or chicken. So easy to put together with not a lot of ingredients."

INGREDIENTS:

1/2 packet of Miracle Rice
3 medium avocados (cubed)
2 medium shallots or onions (diced)
1 large tomato (de-seeded & cubed)
1/2 yellow bell pepper (cubed)
2 to 3 lime or lemons (juiced)
2 to 3 tbsp olive oil
Salt & black pepper to taste
Low-carb natural sweetener to taste (optional)

DIRECTIONS:

1. Prepare miracle rice per instructions on packaging.

2. For the dressing, mix olive oil, lime juice, salt, pepper & sweetener (if using) in a bowl. Adjust taste accordingly. Set aside.

3. Combine all other ingredients in a bowl, drizzle the dressing over and mix well.

4. Spoon into an avocado shell or any serving bowl. Sprinkle with more black pepper.
