Fried Miracle Rice Veggie Bowl

"Packed a bowl for lunch. Only this is a grain-free cauliflower fried rice bowl! In all honesty, is there a better veggie than cauliflower? I think not. You can purée cauli for mashed fauxtatoes, blend cauli for a creamy Alfredo sauce, or rice cauli and have yourself something like this.
I used to mix cauli rice with real rice to keep the traditional sticky texture, but this time I mixed the cauli rice with shirataki rice and lemme tell you the bowl really is lit!!"

INGREDIENTS:

1 package of Miracle Rice
Frozen cauliflower rice
Avocado oil
Mixed frozen veggies
Trader Joe's sriracha baked tofu
1/2 Tbsp. toasted sesame oil
Tbsp of coconut aminos

DIRECTIONS:

1. Prepare Miracle Rice according to package and set aside.

2. Sauté frozen cauliflower rice in avo oil. Add in Miracle Rice. Mix well.

3. Add in all the rest; veggies, tofu, toasted sesame oil, and coconut aminos.

4. Mix, eat, repeat.
