Homemade Meatballs and Marinara over Fettuccine

"Last night’s comfort food! Can’t beat pasta and meatballs with sautéed spinach, goat cheese, homegrown basil, and Roa's Homemade Marinara. Traditional pasta and my stomach don’t get along super well, but I’ve found that Miracle Noodle is a great alternative, and are killer topped with meatballs. I based my meatball recipe on @realfoodwithjessica’s."⁣⁣⁣

INGREDIENTS:

⁣⁣⁣1 pack of Miracle Noodle Fettuccine
1 pound grass-fed ground beef ⠀⁣⁣⁣
1 pound ground bison (can also use ground turkey or chicken) ⠀⁣⁣⁣
1 egg⠀⁣⁣⁣
1/2 cup almond flour ⠀⁣⁣⁣
2 tablespoon coconut aminos ⠀⁣⁣⁣
1 tablespoon dried oregano ⠀⁣⁣⁣
1 tablespoon dried basil ⠀⁣⁣⁣
Garlic powder, onion salt, and red pepper flakes to taste ⠀⁣⁣⁣
⁣⁣⁣
DIRECTIONS:
⁣⁣⁣
1. Prepare Miracle Noodle by rinsing for 15 seconds then drain. Place in a naked hot pan and move noodles around until all water is absorbed. Set aside.⁣⁣⁣
⁣⁣⁣
2. Mix all other ingredients together and roll into balls, bake for 20 minutes at 400 degrees.⁣⁣⁣
⁣⁣⁣
3. While meatballs are baking, warm marinara sauce in a pan and add Miracle Noodle. Allow sauce to soak into noodles for 5 minutes. In a pan, sauté spinach.⁣⁣⁣
⁣⁣⁣
4. Plate noodles followed by meatballs. Top with basil and goat cheese.
