        Teresa was running around, and after her busy day, she chose to make a delicious meal with our keto-friendly fettuccini! Teresa is focused on sustainable, humane food choices for her active family of four.

        INGREDIENTS:

        2 bags of Miracle Noodle Fettuccini
        1/4 cup tamari
        2 tbs rice wine vinegar
        Juice of 1/2 lime
        1/4 cup erythritol
        2 tbs sesame oil
        Chopped cilantro
        Basil
        Chopped scallions
        Red bell pepper strips
        Red pepper flakes
        Salt
        Cooked chicken
        Peanuts
        Fresh herbs
        Limes, quartered

        DIRECTIONS:

        1. Rinse Miracle Noodle Fettuccini for 1 minute. Boil for 2 min, drain. Return to an empty hot pan and dry the noodles out over medium heat till all water is absorbed.

        2. Combine tamari, rice wine vinegar, lime juice, erythritol and sesame oil. Add Miracle Noodle to this sauce and marinade for a a couple of hours in the refrigerator.

        3. Remove noodles from the refrigerator and gently warm in a pan with chopped cilantro/basil/scallions/bell peppers/red pepper flakes & salt. Garnish with cooked chicken, peanuts, fresh herbs, limes.
