Keto Thai Green Curry

INGREDIENTS:

1 pack of Miracle Rice, prepared according to package
1 T coconut oil ⁣
3 T green curry paste ⁣
1 lb. chicken tenders cut into pieces ⁣
1 can coconut milk ⁣
1/2 cup chicken stock ⁣
1 cup sliced bell peppers ⁣
2 hot red chilies, sliced ⁣
1 1/2 T fish sauce ⁣
1 T sweetener ⁣
1/4 cup torn basil leaves ⁣
Limes, cilantro, and extra basil to garnish ⁣

DIRECTIONS:

1. Heat skillet to medium and add coconut oil, curry paste, and chicken. Cook until chicken is browned on the outside but not all the way cooked through. ⁣

2. Add chilies and bell peppers, followed by coconut milk, stock, fish sauce, and sweetener. Simmer for 10 minutes, then add in basil. ⁣

3. Serve with prepared shirataki rice and garnishes. Quick and Easy!!
