"Keto Thai Green Curry is probably my all-time favorite fast and easy weeknight dinner. The flavor combo is unreal. It's spicy and fresh and so delicious. I served it with Miracle Noodle Shirataki Rice to really make it authentic."
INGREDIENTS:
1 pack of Miracle Rice, prepared according to package
1 T coconut oil
3 T green curry paste
1 lb. chicken tenders cut into pieces
1 can coconut milk
1/2 cup chicken stock
1 cup sliced bell peppers
2 hot red chilies, sliced
1 1/2 T fish sauce
1 T sweetener
1/4 cup torn basil leaves
Limes, cilantro, and extra basil to garnish
DIRECTIONS:
1. Heat skillet to medium and add coconut oil, curry paste, and chicken. Cook until chicken is browned on the outside but not all the way cooked through.
2. Add chilies and bell peppers, followed by coconut milk, stock, fish sauce, and sweetener. Simmer for 10 minutes, then add in basil.
3. Serve with prepared shirataki rice and garnishes. Quick and Easy!!
