Dinner does not have to be complicated. Try this Lentil Mushroom Un-Pasta recipe. It’s incredibly easy, comforting, and delicious.
INGREDIENTS:
1 bag Miracle Noodle Fettuccine
1 cup lentils, cooked or canned
1/2 cup mushrooms, I used baby bellas
1/2 cup scallions, chopped
1/4 cup shallots, chopped
1/4 cup veggie broth
1/2 tbsp avocado oil
1/2 tbsp coconut aminos
2 tsp grated ginger
1/2 tsp pepper
INSTRUCTIONS:
1. Add oil, mushrooms, and shallots to a pan on medium-high heat and cook until tender. Turn the heat down to medium.
2. Add broth, lentils, scallions, coconut aminos, ginger, and pepper and simmer while miracle noodles are cooking.
3. Cook Miracle Noodles in a separate pan per directions on the package (takes maybe 4 minutes).
4. Add miracle noodles onto a plate and top with the other pan ingredients.
5. Done! Maybe 15 minutes.
