Peppery Pork Rib Soup

"Happiness is having two of my favorite food in one bowl - peppery pork ribs and stomach soup with spinach noodles from Miracle Noodle. I love the spicy taste of this soup so would generally add lots of pepper. The pork ribs and stomach are boiled until soft and tender.

This savory and peppery soup can be enjoyed on its own or with rice. But today, I tried it with miracle spinach noodles and it was so good."

INGREDIENTS:

1 packet Miracle Noodle Spinach Angel Hair
2 lbs pork ribs (blanched in boiling water)
1 piece pork stomach (cleaned and blanched in boiling water)
Black pepper to taste
Salt to taste
Chicken stock powder or bouillon (optional)
1 bunch of baby spinach

DIRECTIONS:
 
1. Prepare miracle noodle per instructions on the packaging.

2. In a pot, boil the pork ribs and stomach with 2 litres of water and black pepper until the ribs and stomach are soft and tender. Add seasonings to taste. 

3. Transfer a portion of the soup, pork ribs and stomach into a small pot and add the noodles. Boil for a while then add baby spinach. Dish up and garnish with chopped spring onions. 

4. The extra soup and ingredients can be used to make more portion of noodles, enjoyed on its own or make soupy rice.
